In cucina Dal 1934

Cooking since 1934

Many years ago, in 1934, Agnese and Amerigo opened the doors to the trattoria located in the heart of Emilian Appennines, in the fertile Samoggia Valley, perched in the middle of the Modena and Bologna hillsides. The trattoria has, since then, been one of the most important gastronomic points of reference for the valley. The cuisine has always respected tradition and is characterised by the simplicity and authenticity of its ingredients. Over time, while keeping traditional recipes close to our hearts and in the kitchen, we have also developed more innovative dishes which still, however, remain rustic and respectful of the land from which they come. In all of our dishes, even the most innovative ones, we always pledge to use the finest local ingredients in keeping with the traditions of our pocket of our hillside. We pride ourselves on our respect for nature’s natural cycle by adopting a cuisine that focuses predominatly on what the various seasons have to offer, by harvesting and using those raw materials or products when they are at their finest. There are some dishes that are ‘evergreens’ and are offered all year round, but many change from season to season. Over the years we have gained an international reputation for the flavours and aromas of our fresh mushroom and truffle dishes, the precious fruits of our local Appennine forests.
